Baking is a massive part of my self care routine. It de-stresses me (even with the kitchen looking like an absolute tip afterwards), makes me feel productive and there's a tasty reward at the end. It even has the added bonus of giving me some easy Insta content *side grin*.

This year I made a whole lot of Easter goodies for the season because, well, what's Easter without chocolate and eating a whole bunch of tasty snacks? I joke of course - it's such an important holiday for so many people, and I love to celebrate it in some way, even if it is a LOT different to the Catholic way that I was brought up with.

The first thing I made was the most ambitious. It's a Jane's Patisserie recipe for mini egg millionaire shortbread and wow. Her recipes are always the best (and often where Zoella 'borrows' hers from) - you can find this one here.

I accidentally used evaporated milk instead of condensed milk for the caramel (as it turns out they are definitely not the same thing), so this ended up super runny and created a big mess. But, it was tasty. The shortbread had mini eggs in it as well as them covering the top. It was so easy to crush and sprinkle them to look pretty and it went down an absolute treat (and gave me my most liked Insta photo ever!).

As it turns out, hot cross buns take THREE HOURS TO MAKE. I used a recipe from the Tanya Burr bakes book, but I'm sure Mary Berry's one (here) is absolutely trustworthy. They are very tasty toasted with butter on and actually tasted like real hot cross buns, so the three hours was (sort of) worth it. Plus saying 'I'm just waiting for my dough to prove' makes me feel like I'm on bake off.

And last but not least I made these easter brownies, another Jane's Patisserie recipe. I did make little chocolate nest cakes as well (which I always want to eat all year round), but totally forgot to take pictures of them and they're an absolute Easter staple for me rather than a new bake. 

These brownies have pretty much every type of little egg in - Cadbury's mini eggs, Smarties mini eggs, Galaxy golden eggs and Milkybar eggs. Weirdly it works. They're the most chocolate-y, least healthy thing I've ever baked (even topping the shortbread from this post), but if you can't indulge on chocolate at Easter, then when can you?
