So, summer's here and let's face it: we're in England, there's gonna be a barbecue. Whether you're hosting one yourself or have been asked to bring something round to a friend's, these skewers are brilliant if you're clean eating. I personally try to avoid any beef or pig meat because of the fat content, so stick to turkey and chicken. That's why at a barbecue I opt to make these rather than chomping down on grisly burgers (ew).


 Ingredients (makes 8 skewers):

2 large chicken breasts
1 red pepper
2 garlic cloves
1 tablespoon soy sauce
1 tablespoon white wine vinegar
3 tablespoons extra virgin olive oil
1 teaspoon balsamic vinegar
Salt and pepper

Method:

1.) Chop the chicken breasts up into reasonably sized chunks. 

2.) Chop the red pepper up into fairly large chunks.

3.) Finely chop or crush the garlic. Put it in a large bowl. Add the soy sauce, white wine vinegar and 2 tablespoons of olive oil. 

4.) Add the chicken chunks to the bowl. Spoon the mixture over the chunks to make sure that all are covered. Tip: although it's not necessary to, marinating the chicken for a few hours at this point allows the flavours to really seep in nicely. This particular marinade was handed down to me by my grandma, so I have a bit of a soft spot for it. 

5.) Put the rest of the olive oil, the balsamic vinegar, salt and pepper in a bowl. Mix.

6.) Start creating the skewers. I put two pieces of chicken on to every piece of pepper but you can vary it as you wish. Before putting each piece of pepper on, dip it in the leftover marinade. 

7.) Cook on the barbeque until the meat is ready. Enjoy!
